First, is water availability. Not all food trucks have running water close by.
Keep in mind: A ceiling height of 120″ or lower will require a low profile hood, not the standard 24′ tall size (except for concession, type 2, and condensate hoods).
For high heat equipment, you may require larger fans for makeup air.
PLEASE NOTE: Some locations require air to be Tempered when using a PSP (Perforated Supply Plenum) – Check with your local jurisdiction authority.
