Why is it important to have exhaust fan hinges for my commercial kitchen exhaust system?

According to the National Fire Protection Association Standard 96, all commercial kitchens need to have an exhaust fan kit installed in their exhaust system.  Not only does NFPA require them they are required by local codes, insurance companies, and fire marshals.  

What does the exhaust fan hinge do?

First of all, there are several types of hinge kits out there.  But, for the most part, they all have the same function.  They are there to allow the exhaust system to open and close for easier cleaning and maintenance.  The hinge kits come with a chain attachment that uses a locking pin.  This allows the turbine to tilt back and get in a secured position for cleaning or maintenance.  Once cleaned, the chain and pin can lock the system back in place.
